CAJUN SHRIMP AND SAUSAGE VEGETABLE SKILLET
— 14 ounce (ca. 529 g) pork or chicken sausage sliced
— 1 pound (ca. 454 g) large shrimp peeled and deveined
— 2 medium-sized zucchini sliced
— 1/2 bunch asparagus sliced into thirds
— 2 medium-sized yellow squash sliced
— 2 red bell pepper chopped into chunks
— Salt and Pepper
— 2 Tablespoons olive oil
— 2 Tablespoons Cajun Seasoning
Combine the shrimp, sausage, zucchini, yellow squash, asparagus, bell pepper, and salt and pepper in a large mixing bowl. Toss in the olive oil and Cajun seasoning until evenly coated.
Heat a large skillet over medium-high heat. Cook for 5-7 minutes, or until the shrimp are pink, and the vegetables are tender.
If desired, garnish with fresh parsley and serve immediately.
