CARB & SHRIMP PIZZA RECIPE

CARB & SHRIMP PIZZA RECIPE – My mother used to make a delicious shrimp and crab pizza when we were little. My children also request it, and I continue to make it for them.
INGREDIENTS NEEDED:
— 1/2 pound uncooked shrimp (61-70 per pound), peeled and deveined
— 1 tablespoon butter
— 2 tablespoons lemon juice
— 1-3/4 cups sliced fresh mushrooms
— 1 small onion, chopped
— 1/4 teaspoon salt
— 1 small sweet red pepper, cut into strips
— 1 garlic clove, minced
— 1/3 cup Alfredo sauce
— 1 cup water
— 1-1/4 cups coarsely chopped imitation crabmeat (about 1/2 pound)
— 2 cups shredded part-skim mozzarella cheese
— 1 prebaked 12-inch pizza crust

RECIPE INSTRUCTIONS:
Preheat the oven to 450 degrees Fahrenheit (ca. 232 °C). Combine the shrimp, water, and lemon juice in a small basin. Allow for a 10-minute rest period.
Meanwhile, melt butter in a large skillet over medium-high heat. Cook and stir for 4-5 minutes, or until mushrooms, onion, and pepper are soft. Cook for an additional minute after adding the garlic and salt.
Using a strainer, remove the shrimp and discard the liquid. Add the shrimp and crab to the pan and cook for another 1-2 minutes, or until the shrimp turn pink.
Spread Alfredo sauce over the crust in an ungreased 12-inch pizza pan or baking sheet. Pour the shrimp mixture over the sauce and top with cheese. Bake for 8-10 minutes, or until the cheese has melted, and the crust is brown.
