CAST IRON PORTERHOUSE STEAK

INGREDIENTS NEEDED:

— 1-1.5lb Porterhouse

— 1-2 tbsp of Avocado oil

— 2-3 sprigs of fresh Rosemary

— 3 gloves of garlic (peeled & kept whole)

— 2 tbsp of butter

— Salt & pepper

RECIPE INSTRUCTIONS:

Remove porterhouse from fridge and salt both sides. Let sit for 15-20 minutes.

Place cast iron on burner. Turn burner on high heat. Once hot – add avocado oil.

Salt and pepper both sides of steak. Place onto cast iron pan.

Sear one side 60-90 seconds (depending on weight). Flip. Add butter, garlic, and Rosemary to pan. Sear 2nd side 60-90 seconds.

Reduce heat to medium. Tilt pan and baste butter over steak continuously for 2 minutes.

Remove steak from pan. Top with garlic, rosemary and remaining butter in pan. Cover with tin foil and let rest for 5-10 minutes.

Slice and serve!
