If you like your fish to have a little crunch to it, give this a try……
— 3 lbs small catfish filets
— 1 1/2 cups cornmeal
— 1/3 cup flour
— 1/2 cup buttermilk
— 1 tablespoon old bay
— 1/2 teaspoon salt
— 1/4 teaspoon pepper
— 1 beaten egg
— Louisiana hot sauce
— Cooking oil
— Season fish with old bay
In a bowl, beat one egg, buttermilk, and several dashes of Louisiana sauce.
Place fish in batter and let sit in fridge about 30 minutes.
Mix cornmeal, flour, salt, and pepper together well.
Heat oil to 340° in a heavy frying pan.
Remove the fish from the batter, place on a sheet pan and squeeze the juice of a half lemon over the fish, then toss it in the cornmeal mixture.
Place into hot oil and fry until golden brown and crispy.
