Fried catfish is a satisfying dish if you’re looking for a quick and delicious fish dinner. Flakes of white fish are ideal for pan-frying. The fillet is lightly coated in cornmeal before being fried until crispy. It also only takes a few minutes to prepare and cook.
DELICATE FRIED CATFISH
INGREDIENTS:
— 1 ½ pounds catfish fillets 3 large fillets, divided into 6 smaller pieces
— ¼ cup all-purpose flour
— 2 cups yellow cornmeal
— 1 teaspoon garlic powder
— ½ teaspoon black pepper
— 1 teaspoon kosher salt
— ¼ teaspoon cayenne pepper
— Vegetable oil as needed for frying
INSTRUCTIONS:
Whisk together corneal, flour, garlic powder, salt, black pepper, and cayenne pepper in a shallow bowl.
Season the catfish on both sides with salt and pepper. Dredge both sides of the chicken in the cornmeal mixture.
In a large nonstick pan or cast iron skillet, add enough vegetable oil to reach a depth of 34 to 1 inch. Heat over medium heat until the temperature reaches 350 °F (177 °C). Check the temperature between batches and adjust the heat as necessary to keep it within this range.
Fry two pieces of fish at a time in the pan until golden brown and crispy on both sides, 3 to 4 minutes per side, or until the internal temperature reaches 145 °F (62.78 °C). Remove to a paper towel-lined pan to drain—Fry the remaining fish pieces.
Serve with lemon wedges and tartar sauce on the side.
