EASY CHICKEN BROCCOLI LASAGNA INGREDIENTS NEEDED:
— 8 lasagna noodles cooked and cooled.
— 3 cups vegetables cooked and cooled.
— 2 eggs.
— 4 cups cooked chicken.
— 10 oz (ca. 378 g) frozen chopped spinach defrosted and squeezed dry.
— 2 cups cottage cheese or ricotta cheese.
— 2 tablespoons parsley.
— ⅔ cup shredded Parmesan cheese, chopped.
— 4 cups mozzarella, divided.
For the Sauce:
— ¼ cup flour.
— ⅓ cup butter.
— 1 onion, diced.
— 4 oz cream cheese.
— 2 cups milk.
— 2 cups chicken broth.
— 1 teaspoon dried basil.
— 2 cloves garlic, minced.
—½ teaspoon oregano.
EASY CHICKEN BROCCOLI LASAGNA INSTRUCTIONS RECIPE:
Firstly, preheat oven to 350 °F.
How To Make The Sauce:
To start preparing the sauce, melt butter, garlic, and onion over medium heat. Cook until onion until become softened, for about 3 minutes. Then add the flour and keep cooking for 2 minutes.
Minimize the heat. Mix the milk and broth. Add a few at a time, and whisk until to be thickened. The batter will look very thick, keep adding and stirring at a time until be smooth.
Once all the liquid has been added, stir in cream cheese until melted.
Remove out from the heat and add in 1 cup mozzarella cheese, ⅓ cup Parmesan, and dried basil and oregano.
How To Assembly:
Combine eggs, cottage cheese, parsley, and spinach. And set aside.
In a 9×13 pan, construct four layers of noodles, sauce, cooked vegetables and half of the chicken. Sprinkle with quart of cup Parmesan, half of Mozzarella, and ⅓ of the sauce.
Add another layer of cottage cheese mixture, noodles, chicken, sauce. Top with noodles and sauce. Cover and bake 40 minutes.
Uncover, sprinkle with cheese, and bake for about 30 minutes more.
