EGG ROLL IN A BOWL

This EASY EGG ROLL IN A BOWL is a great dinner option that’s low in points and high in nutrition.

EGG ROLL IN A BOWL

INGREDIENTS NEEDED:

— 1 lb (ca. 454 g). 98% fat-free uncooked ground chicken breast

— 1 ½ tsp. Sesame oil

— 3 Tbsp. Low sodium soy sauce

— 1 tsp. Ginger paste

— 1 Bag coleslaw mix

— ½ C. Shredded carrots

— ¼ C. Chopped green onions

RECIPE INSTRUCTIONS:

Place the ground chicken into a skillet over medium-high heat, and sauté until browned completely.

Stir in the soy sauce, ginger paste, and sesame oil, while lowering the heat to medium.

Mix in the carrots and coleslaw mix. Cook covered until the vegetables have softened.

Sprinkle with green onions before serving.
