FRENCH ONION CHICKEN RECIPE

FRENCH ONION CHICKEN RECIPE – Chicken cubes that have been expertly seasoned and fried till golden brown. Then it’s simmered in a delectable broth. With luscious caramelized onions on the side. For the ultimate melty sensation, top with Gruyere’ cheese.
INGREDIENTS:
— 2 1/2 lb chicken breast cubed
— oil
— 2-3 cloves garlic finely chopped
— salt to taste
— black pepper to taste
— 1 1/2 onion
— 2 tsp thyme dried
— 2 tsp oregano dried
— 1 cup all-purpose flour for dredging
— 4 cups beef broth
— 1 – 1 1/4 cup Gruyere’ cheese
— parsley garnish fresh or dried
— 1/4 cup Mozzarella cheese optional
INSTRUCTIONS:
Using medium heat, add the oil to a large skillet and allow the oil to become hot.
Add the onions, salt, pepper, thyme, and oregano.
Combine the herbs and spices with the onions.
Allow the onions to cook until it becomes caramelized.
Add the chopped garlic and combine
Remove from the pan and set aside.
Season the chicken with salt and black pepper.
Mix until well combined.
Dredge seasoned chicken with flour, shaking off any excess.
Add a small drizzle of oil to the pan and fry the cubed chicken pieces until golden brown.
- NOTE: Do not over crowd the pan, fry more than 1 batch of chicken if necessary.*
Add the beef broth to the pan, along with caramelized onions, allowing the liquid to reduce by 1/2.
Stir the mixture to assure it is not sticking to the bottom of the pan.
Add Gruyere’ cheese and Mozzarella.
Lower the flame, cover with a lid and allow the cheese to become melted.
Serve with pasta or your preferred choice of food.
