— 1 pound of ground beef
— 1 egg
— 1/4 cup real shredded cheddar cheese
— 2 tablespoons taco seasoning
— 1/2 teaspoon onion powder
— 1/2 teaspoon salt
— 1/4 teaspoon black pepper
— 1/4 cup enchilada sauce
Preheat oven to 400.
Add all meatball ingredients in a large bowl and mix well until combined.
Shape into about 15 meatballs and place on an aluminum foil-lined baking sheet.
Bake for 25 minutes, or until fully cooked through.
Put the casserole together:
Preheat oven to 350 degrees.
Pour 1/4 cup of enchiladas sauce into the bottom of a small baking dish or cast iron skillet.
Place the cooked meatballs on the plate and top with the remaining enchilada sauce. Put grated cheese on top.
Bake for 15 minutes, or until cheese melts and bubbles form.
