MINI COOKIE CHEESECAKES

MINI COOKIE CHEESECAKES – They are absolutely irresistible, using a chocolate chip cookie crust and topped with creamy no-bake cheesecake to boost cookie flavor.

This recipe is a combination of chocolate chip cookies and cheesecake, It’s an amazing, delicious and flavored dessert.

MINI COOKIE CHEESECAKES

INGREDIENTS NEEDED:

— ¾ cups refrigerated chocolate chip cookie dough

— ¾ cup mini chocolate chips

— ½ cup heavy whipping cream

— 8 oz (ca. 302 g) cream cheese, room temperature

— ⅓ cup brown sugar

— 2 Tablespoons sour cream, room temperature

— 1 teaspoon vanilla extract

RECIPE INSTRUCTIONS:

Line a muffin pan with 12 paper liners, or place 12 silicone cups onto a cookie sheet.

Place 1 Tablespoon of cookie dough into the bottom of all muffin liners. Transfer to bake for about 12 minutes, or until lightly golden. Remove from oven, let to cool, and go to prepare the cheesecake filling.

In a large bowl, with an electric mixer, start beating together the cream cheese, brown sugar, and sour cream for 2 minutes until smooth and well-combined. Set aside.

In another bowl, whip the heavy cream on medium-high speed until it forms stiff peaks, about 5 minutes.

Fold the whipped cream into the cream cheese mixture, along with the vanilla extract. Stir in the chocolate chips.

Scoop 2 Tablespoons of cheesecake filling onto each cookie crust.

Refrigerate for about 3 hours, or until firm.
