— 4 pork chops
— 2 medium onions sliced
— 1 lime
— 4 tablespoons canola oil
— 1 tablespoon minced garlic
— Kosher salt
— ground black pepper
— garlic powder
— onion powder
— Complete seasoning (Badia)
— 3/4 cup Mojo Marinade
— 1 gallon ziplock bag
Lightly season pork chops on both sides with salt, pepper, garlic powder, onion powder, and complete seasoning.
Place pork chops in a ziplock bag and pour in 1/2 cup of mojo marinade and squeeze 1/2 of a Lime in the bag -make sure all pork chops are coated with marinade
Let Pork chops marinate for 15 minutes to 24 hours.
In a skillet, heat oil and minced garlic for 1-2 minutes.
Add pork chops and sear on medium heat for 10-12 minutes on each side or until fully cooked through and set aside.
In a separate small skillet, add sliced onions, 1/4 cup of marinade, salt, and pepper to skillet and sauté 3-5 minutes on high heat or until tender.
Spoon sautéed onions over pork chops and serve with leftover lime (cut the other half of lime into slices).
