PEACH COBBLER MUFFINS INGREDIENTS NEEDED:
For The Muffins:
— 1 cups chopped fresh peaches (you can use packaged peach).
— 2/3 cup white sugar.
— 1 1/4 cup all-purpose flour.
— 1 1/2 teaspoon baking powder.
— 1/2 teaspoon salt.
— Half cup whole milk.
— 1 tsp vanilla extract.
— One egg.
— 1/4 cup vegetable oil.
For the Streusel Topping:
— 1/4 cup all-purpose flour.
— 4 tablespoons cold butter(unsalted).
— 1/2 teaspoon baking powder.
— 3 tablespoons white sugar.
— 1/2 teaspoon cinnamon.
PEACH COBBLER MUFFINS INSTRUCTIONS RECIPE:
For The Muffins:
Preheat the oven to 350 °F (ca. 177 °C) and prepare a large muffin tin with 12 muffin cups.
Add the baking powder, flour, salt, and sugar to a large bowl and whisk together to combine. Then add peaches and blend well to coat.
Add the vanilla extract, milk, the one egg, and oil, and stir together with a spatula just until the flour no longer there.
Distribute equally the batter out into the muffin cups (about 3/4 full, 1/4 for garnish).
For The Topping:
In a small bowl, mix the flour, baking powder, sugar, and cinnamon. And stir well.
Cut the cold butter into small pieces, add to flour mixture and beat with your fingers until it appear like coarse crumbs.
Place above the muffins a spoonful of the Streusel Topping.
