PORK BELLY BAKED BEANS

PORK BELLY BAKED BEANS, a magnificent slab of pork belly pieces, rich molasses, chopped onions, bell pepper, and an ever-so-slight dusting of red pepper flakes elevate these basic baked beans to an umami experience.

PORK BELLY BAKED BEANS

INGREDIENTS NEEDED:

— 2 tablespoons avocado oil
— 1 1/2 lbs. rind trimmed pork belly, diced in 1/2-inch cuts
— 1/2 cup chopped green bell pepper
— 1/2 cup chopped sweet onion
— 1 cup ketchup
— 1/2 teaspoon red cayenne red pepper flakes
— 1/2 cup rich molasses
— 1 tablespoon mustard powder
— 1/4 cup Worcestershire sauce
— 3 (15 oz (ca. 567 g).) canned pork and beans, drained

RECIPE INSTRUCTIONS:

Set aside a big baking dish, at least a 9 × 13 inch, sprayed with nonstick cooking spray. Preheat the oven to 400 degrees Fahrenheit (204.44 °C).

Preheat Dutch oven to medium high heat with a little avocado oil.

To render the chopped pork belly chunks to a soft and crispy texture, reduce the heat to a low to medium simmer, being careful not to cook them too fast or too high. Turning and moving them about in the Dutch oven on a regular basis to prevent them from burning on one side. Remove them from the Dutch oven onto a paper towel lined tray to drain after they are nice and crunchy.

Two tablespoons of the fat should be set aside. Save the remaining for a seasoned fat to use in other meals.

Combine the onions and bell pepper in a large mixing bowl. Cook for another 2-3 minutes before adding the other ingredients. The pork belly should be saved for the top. Combine all of the ingredients in a large mixing bowl and stir until thoroughly combined. Pour the bean mixture into the baking dish that has been prepared. Evenly distribute the pork belly on top of the bean mixture.

Bake for 40-45 minutes, or until the beans have set, and the liquids have thickened.

NOTES :

Make sure the pork belly is cooked low and slow. This will guarantee that the pork belly is tender and crisp, and if the baked beans brown too quickly before the fluids thicken, cover with foil.
