QUICK LEMON PIES

INGREDIENTS NEEDED:

— 14.1 ounces (ca. 533 g) pie crust, store purchased.

— 1 large egg white.

— 1 ½ cups powdered sugar.

— 12 tablespoons chilled lemon curd.

— ½ teaspoon lemon zest.

— 1 teaspoon lemon juice.

— 1 tablespoon whole milk.

RECIPE INSTRUCTIONS:

Place lemon filling in the freezer to chill for 15 minutes. And Preheat oven to 375 °F.

Line a large baking sheet with parchment paper.

Roll out the dough, and cut it in the shape of circles to form the crust of the pie. Make more circles until you finish the dough.

In each circle, add 1 tablespoon of lemon filling to the center. Fold over the pie crust and gently pinch the edges to get enclosed pies.

Using your pastry brush, Grease each pie with the egg white. Repeat the process for all pies.

Place the pies in the center of the oven for baking. Let them for about 15 minutes, or until they will be golden.

For the Glaze:

In a bowl, add the milk, zest, and lemon juice. Whisk well until be creamy, set aside until be thickened.

Remove the pies from the oven, and let to cool for 15 minutes. Then, with a pastry brush, coat the cool pies with the icing mixture.

Let the icing to set, and serve!
