Romany Creams are considered as one of the most popular biscuits sold in South of Africa. These famous cookies are crunchy, Chocolatey and packed with coconut, and are paired together with melted chocolate. This was how I prepared them at home.
I think that I will share with you the recipe that will enable you to make these delicious biscuits at home. They are so easy to make, additionally, that a child could prepare them. In fact, bring your kid around you to help you roll and form the biscuits. It’s the perfect way to keep the youngsters occupied on a cold winter’s afternoon.
ROMANY CREAMS INGREDIENTS NEEDED:
For 40 cookies (20 portions):
— 400 gm dark chocolate.
— 100 g flour.
— 2 tablespoons liquid vanilla.
— 1 teaspoon baking powder.
— 4 eggs.
— 110 grams butter.
— 200 gm brown sugar.
— 200gm chocolate chips.
— 2 pinch salt.
For The Cream:
— 2 tsp liquid vanilla.
—6 tablespoons of powdered sugar.
— 250g liquid-cream (30�t).
— 250gm-mascarpone Azurra.
ROMANY CREAMS RECIPE INSTRUCTIONS RECIPE:
For The Cake:
Start melting the chocolate with butter in a double boiler, & leave to cool.
Beating eggs with sugar. Adding chocolate/butter mix.
Add the flour also baking powder and continue mixing. Adding chocolate chips & blend again.
Leave the dough to rest for half an hour in the refrigerator.
Lay small mounds of cookie dough on parchment paper, using 2 tablespoons, and add a few chocolate chips to the dough.
Bake for 10 to 15 minutes at 180 °C.
For The Cream:
Beat all the ingredients for 2 minutes with an electric mixer, until the preparation doubles in volume: whole liquid cream, mascarpone, liquid vanilla and powdered sugar.
For Collecting Cookies:
Once the cookies have cooled, apply the cream to the flat side of the cookie. Then cover it with a second cookie. One serving = 2 cookies with cream in the middle.
Repeat this process for all of your cookies.
