RUSH HOUR SUPPER RECIPE

RUSH HOUR SUPPER RECIPE – My Mother-in-Law gave me an ancient ground beef recipe when I first got married, and it’s called Rush Hour Super. She taught me how to cook something simple and quick.
INGREDIENTS:
— 1 lb (ca. 454 g). Ground beef (I use lean ground beef 90/10)
— 1 medium chopped onion
— 1/2 cup uncooked rice (I use Uncle Ben’s Original Long Grain Rice)
— 1 16 oz (ca. 605 g). Can whole tomatoes (today, I buy canned diced tomatoes)
— 1 cup water
INSTRUCTIONS:
Sauté meat in a large skillet.
Add onions and tomatoes, rice, and water.
Season with 1 tablespoon sugar and season to taste with salt and pepper.
Cover and cook 25 minutes.

NOTES:
Corn, ranch style beans, or green peas are occasionally added. Adding corn is my husband’s preferred method. Green peas are my personal favorite. You get to choose your fave!
