SHRIMP AND SAUSAGE WITH POTATOES AND CORN – These oven-baked shrimp and sausage foil packages are a quick and easy supper. This delicious, savory, and low-calorie supper is packed with shrimp, kielbasa sausage, soft potatoes, and corn on the cob. These foil package dinners are perfect for the barbecue this summer and can be made ahead of time, making supper a breeze.

SHRIMP AND SAUSAGE WITH POTATOES AND CORN

INGREDIENTS NEEDED:

— 1 pound (ca. 454 g) kielbasa sausage cut into 2” chunks
— 1 pound (ca. 454 g) jumbo shrimp peeled and deveined with tail on
— 5 mini corn cobs cut into thirds
— 1 pound (ca. 454 g) baby Yukon gold potatoes, washed and cut into quarters
— 1 yellow onion diced
— 3 cloves garlic minced
— 4 tablespoons butter
— 2 tablespoons Slap Ya Mama
— 1 lemon

RECIPE INSTRUCTIONS:

Preheat the oven to 425° and prepare (5) 12” pieces of foil.

Boil quartered potatoes until slightly cooked in a large pot over medium high heat. Drain the water and set the potatoes aside to cool while you prepare the remaining ingredients.

Combine the shrimp, sausage, corn cobs, diced onion, minced garlic, and cooled potatoes in a large mixing dish.

Sprinkle with seasoning and stir well.

Divide mixture between the 5 pieces of foil.

Cut 5 lemon wedges, add a wedge to each foil packet and use the remaining piece of lemon to squeeze the juice into each packet.

Pinch the short edges of the foil together, then fold and pinch the other ends to seal.

Place the packets on a baking sheet and bake for 25-30 minutes in a preheated oven.
