SHRIMP LOADED SWEET POTATO

SHRIMP LOADED SWEET POTATO – I made the sweet potato ahead of time to save time when I was eating it. It can be made a few days ahead of time, the night before, or the morning of the event. Simply reheat it in the microwave, toaster oven, or normal oven set to broil. I prefer to broil it in the oven, so it stays crispy and not soggy.
