SLOW COOKER PORK

SLOW COOKER PORK – It is a simple crock pot dish made with seasoned pork shoulder, carrots, and green chiles that are cooked low and slow until the pork is fork tender.

This dish, like our Slow Cooker Ultimate Pot Roast, is ideal for any weekday or for taking the stress out of cooking on the weekend when you need to relax and unwind.

SLOW COOKER PORK

INGREDIENTS:

— 2 tablespoons vegetable oil

— 4 carrots, cut into 1” chunks

— 1 onion, diced

— 3 pounds (ca. 1,361 g) pork shoulder, cut into 1” chunks

— 1 teaspoon Kosher salt

— 1/4 teaspoon coarse ground black pepper

— 14 ounces (ca. 529 g) diced tomatoes, undrained

— 4 ounces (ca. 151 g) canned diced green chiles

— 10 ounces (ca. 378 g) can green enchilada sauce

— 1 tablespoon ground cumin

— 3 cloves of garlic, minced

— 1 teaspoon dried oregano

INSTRUCTIONS:

Season pork with salt and pepper and add to a large Dutch oven on medium high heat with vegetable oil.

Cook until seared on all sides until well browned, about 3-4 minutes on each side.

Add in the remaining ingredients, stir well to combine and cover.

Cook, on low heat, for 5-6 hours or until pork is fork tender.
