SOUTHERN FRIED PORK CHOP – Now and then, I like to blend a few of my favorite flavors. The sauce is absolutely wonderful because of the strong flavors of lemon and garlic and the brininess of capers. Additionally, who doesn’t adore a succulent southern fried pork chop?
— 2 pork chops, center cut
— 1 good pinch of salt and pepper
— 1 good pinch of garlic powder
— All purpose flour, for dredging
— A few cups of peanut oil, for frying
Start by preheating the oil to about 360 degrees, for frying.
Then, in a large bowl – season the chops with salt, pepper, and garlic powder. Then, dredge in the flour and fry until golden brown. Drain the excess oil on paper towels.
Pour the sauce over the chops while they’re still warm. For the sauce, just melt 2 tablespoons of butter with 2 cloves of minced garlic, the zest, and juice of half a lemon, along with a spoonful or two of capers. I add a pinch of salt and pepper to the sauce to make sure it’s really seasoned. That’s it. Simple, right?
