STAIN GLASS FRUIT SALAD – Fresh pineapple chunks, fresh strawberry slices, and fresh blueberries are tossed together in a homemade or canned strawberry pie filling in a Stain Glass Fruit Salad. Who says dessert can’t be light and refreshing?

STAIN GLASS FRUIT SALAD
INGREDIENTS NEEDED:
— 3 quarts fresh whole strawberries
— 1-quart blueberries
— 2 tablespoons fresh lemon juice
— 1 whole pineapple, cut into 1/2 inch chunks
— 2 tablespoons cornstarch
— One cup sugar
— 1 teaspoon vanilla
— 1 1/2 cups water
RECIPE INSTRUCTIONS:
If making homemade pie filling, use the instructions below.
In a large saucepan, add one cup of water, lemon juice and 1 cup of strawberries diced and sugar. Bring to a boil over medium heat, stirring often. Cook for about 2 minutes.
In a small bowl, add the cornstarch and a 1/2 cup of water. Stir together until mixed well, making a slurry.
Pour the slurry mixture slowly into the sauce mixture while the mixture is boiling, stirring constantly. Cook for another 1-2 minutes until the mixture is clear and thicken.
Add 2 cups of halved strawberries and vanilla. Stir coating all the strawberries with the sauce, simmer for 1 minute or until the strawberries start to soften; set aside to cool to room temperature.
The pie filling can be refrigerated at this point if making the fruit salad later.
To make the fruit salad.
In a large bowl, add 2 quarts of sliced strawberries, pineapple chunks, and blueberries.
Add the pie filling (homemade or canned) to the prepared fruit and gently fold with a large spatula, being careful not to break up the fruit.
Serve immediately, or refrigerate for later.
NOTES:
Don’t forget to add the vanilla if you’re using canned pie filling. If the pie filling becomes too thick, thin it up with a little water. Keep in mind that pie filling is thick and will thin out when combined with fruit.
