Very Mimosas Coconut Delights

Today I have something special and delicious to offer you, some great coconut delicacies.

In a short time and with a few ingredients we will make something that will enchant, fall in love and surprise everyone.

It is a good recipe to snack with coffee or tea. For those of you who are passionate about coconut, I recommend that you do it because you will love it.


I am passionate about coconut, the kind of coconut that was bought at fairs, the one that is on top of some trays and refreshes the fairground with water over and over again so that it does not dry out. And how many coconuts do not open bought whole, the complicated thing is to open them, extract the juice, and then cut them into pieces. Luckily we now have coconut, any super, well grated at our fingertips to prepare our recipes in a comfortable and easy way.

Grated coconut is a fruit rich in fiber, it is a food rich in potassium. With which it is ideal to be able to elaborate our exquisite coconut delicacies.

Ingredients for approximately 4 people

  • 125 gr of grated coconut
  • 70 ml of hot water
  • 250 grams of sugar
  • 8 egg yolks
  • 2 tablespoons vanilla flavoring
  • Butter
  • sugar to taste


1 . We will heat the oven to 180º in a bowl, add the hot water and let the coconut hydrate. In another bowl we will mix the sugar with the egg yolks until we have obtained a whitish mixture, we will beat a lot to be able to get it to be that way, whitish. We will add the coconut and vanilla and stir well.

2 . In a mold, previously buttered and lined with parchment paper and sprinkled with sugar, we will pour the mixture inside, we will bake in a bain-marie for half an hour.

3.  We will let the cake cool to demold, we will cut with a pasta cutter, we will do it with hearts and circles, we will serve cold and decorated with sugar and strawberry syrup.

It is ideal to surprise on special days, such as Mother’s Day or Valentine’s Day, using the appropriate pasta cutter, it will be a delight.
